Tell us your story, the journey behind your brand, the reason for your business.

With a wealth of experience behind both of us and each having indidual creative strengths, our vision to specialise in bespoke cake designs, macaron tower options and elegant cupcake presentations became so much more exciting with the support of each other. We design our cakes and other dessert products specifically for our clients individual wedding day style, we love creating varying  cake options for our clients, and as a duo our strengths are broader and we can cater for so many varying styles, so it made sense to us to come together us a partnership. We proudly bake from scratch using  tried and true recipes and we source as many local ingredients as possible to ensure our creations are as delicious as they are beautiful. Working from our Montville studio we have a central location to meet with clients, show them our style, and offer a wider range of design options to couples.

What trends have you noticed in recent cake designs, and how does this influence wedding cakes?
The wedding cake is an important part of a wedding day so it is essential that the cake reflects the style and vision of the day, it’s another opportunity to accent their style. As we are located on the Sunshine Coast Hinterland, the rural locations and venues that are nearby range from relaxed rustic spaces to sophisticated elegant reception venues, and we have a huge range of wedding properties surrounding us. We are fortunate to have lush landscape nearby and as a reflection of a more organic location we do cater for many semi-naked cakes and buttercream finished cakes which are beautifully decorated with fresh blooms. Recently we have noticed a trend towards more formal elegant cakes with icing lace detailing, intricate features and a more sophisticated finish.

Tell us a little bit about your process, from enquiry to booking stages, to delivery of your services on the wedding day.
We have found that much of the initial interest is generated by social media such as Instagram and Facebook and bridal couples can message us directly through this media if they wish to. Our website also has a comprehensive enquiry form which allows bridal couples to send us their details. We understand that this is an exciting time and it is our policy to respond to requests within 24 hours when possible.

At Elizabeth and May we hold complimentary cake tasting and design consultations at our Montville studio. We invite all couples who are considering our services to attend, as it is an opportunity to sit with us to design a cake incorporating the various special aspects of their wedding day. It is also an opportunity to visit our fully licensed commercial kitchen to see where their cake will be created. Once the cake design and cake flavours have been decided we send a formal quote and if accepted we will send then our invoice.

As part of our service to couples we offer a complimentary delivery and setup service if the venue is on the Sunshine Coast Hinterland. All other areas do attract a delivery service fee.

Do you offer specialised cakes for allergies of specific dietary requirements?
At Elizabeth and May we create from our Montville studio which is fully licensed with the Sunshine Coast Regional Council. We are able to cater for intolerances however we do not operate from a fully gluten free environment therefore we cannot offer our product to coeliacs.

What would be the most popular wedding cake style now?
We are finding the most popular cake styling at the moment is a cake finished with beautifully rich buttercream and fresh flower blooms. Buttercream finishes are very decadent and have an elegant yet modern design style.

Does the climate, time of the year and location of the wedding play a part in choosing the right wedding cake.
Heat and humidity at certain times of the year can affect a decorated cake. Humidity in particular for a fondant finished cake can cause the icing to develop a sticky surface and the sugar floristry can also be affected. Heat will affect a buttercream finished cake and refrigeration is the safest way to store the cake with the cake being brought out of refrigeration just prior to the reception commencing. We walk through any weather or season concerns when we meet with our clients and try and advise and guide them through choices and selections taking note of the possible challenges that might stem from climate and heat issues.

What’s your favourite dessert style?
Anything chocolate or citrus!

Tell us about a recent cake design that had you weak at the knees with excitement.
Recently we created a wedding cake for a couple who had planned their wedding day over a two year period .The bride was very specific about the styling of her wedding and her cake and it was exciting for us to help her plan her design. We had many meetings about the design and we finally settled on a design that we were delighted to present. The wedding cake was created with 3 tiers of different flavours of mudcake and was finished with white rolled fondant. The bottom tier featured white fondant pleating and this feature reflected the pleated folds of the skirt detailing of her dress and the middle and top tier featured hand piped lace work which was the same as the lace pattern on the bodice of her dress. Her wedding cake was specifically created to accent the details of her bridal gown, it was an amazing brief and we absolutely loved the end result!

Hot tip for 2018 and beyond wedding cake style?
The enquiry has shifted back to the more traditional fondant finished cakes with a modern twist, there is also a trend towards marbled fondant in strong colours and metallic features.
